Traveler's table: Dipping sauces around the world

“Every chutney varies by region, state, neighborhood and even family,” says Thomas, who offers five chutneys on his menu, ranging from mild roasted mint and tomato to fiery chile and tamarind.

Traveling foodie Kate Parham Kordsmeier offers a taste of how seven cultures prepare dipping sauces and where you can find each variation here in the USA.

Dining review: Biju's Little Curry Shop offers big flavors of India

No one is saying that LoDo isn't a popular place to dine in downtown Denver, but it is getting a lot of competition from restaurants in the nearby RiNo neighborhood and some of the developing pockets in between.

Add to the list Biju's Little Curry Shop, a hole-in-the-wall place offering bowlfuls of big flavors that are as vibrant as its colorful walls.

Biju Thomas's fast-casual ode to the South Indian foods of his childhood just opened in December, but already it's become one of the top Indian eateries in the city. The menu is small and simple, with only a few proteins to choose from, but the flavors are big and complex, constructed from layers of house spice blends and slow cooking to coax out the best of each ingredient.

Biju’s Little Curry Shop opened in December in a spot overlooking an alley and a short patch of 26th Street barely visible from the trendy stretches of Walnut and Larimer streets heading into RiNo from Ballpark. While opening a restaurant....

Rethinking Breakfast: 5 Healthy New Recipes

The morning workout presents a conundrum. Eat nothing and you'll fade before it's over. Eat too much and you'll need a bathroom break halfway through. Few people have pondered this conundrum as extensively as Biju Thomas, the co-author of The Feed Zone Cookbook: Fast and Flavorful Food for Athletes and former executive chef to several pro-cycling teams.

10 New Restaurants in and Around Denver To Hit in 2015

To date, Biju Thomas is best known as the author of the Feed Zone cookbooks, aimed at athletes in training. But this funky little dhaba-style joint is a whole other kind of feed zone, geared toward those who’d rather work up a sweat over some spicy Indian eats. Start with a bowl of nutty-sweet biryani covered in curried beef or chicken and lentils. Top it off with the killer chili-and-coconut condiment called samandhi, along with some toasted chickpeas. Wash it all down with an Epic IPA. Repeat. (But, you know, maybe get some actual exercise before that last step.)

When it comes to Indian cuisine, most are familiar with the hearty and dairy-laced dishes of the northern part of the country. But at Biju's Little Curry Shop—which opened in RiNo this week—you'll find the lighter fare of chef Biju Thomas's hometown, Kovalam Beach in the state of Kerala.

"I've been in the food industry forever, traveled all over the world, and what I've realized is that there's no recognized Indian restaurant brand in the United States, and if I don't get in the forefront, if I don't take advantage of this window of opportunity, then I'm going to regret it for the rest of my life," says Biju Thomas, a former pro cyclist, prolific author and South India native, who opened Biju's Little Curry House, a fast-casual tribute...

Biju's just managed to open its doors before year-end 2014, beating a few other eateries -- a new Park Burger and Osaka Ramen -- to the punch in a new development at 26th Avenue and Walnut Street. But it didn't take long for LoHi residents to realize that the South Indian curries and chapati wraps were something new on the scene.

If Biju Thomas' name sounds familiar, it might be because he co-authored The Feed Zone cookbooks (I raved about Portables here). Or it might be because he's been the executive chef for the annual USA Pro Cycling Challenge, not to mention a nutrition adviser to many professional athletes. But Thomas' new project has him stepping out of the sports arena and into the restaurant world.
